Tragopogon porrifolius, also known as purple salsify, is a versatile and delicious vegetable that has been cultivated for centuries. With its long taproot, this plant is drought-resistant and thrives in well-drained soil. Its edible parts include the roots, which have a mild oyster-like flavor when cooked, and the young leaves, which can be added to salads.

Growing Conditions

Purple salsify prefers a sunny location with at least 6 hours of direct sunlight per day. Well-drained, loamy soil with a pH between 6.0 and 7.5 is ideal for this plant. It's a hardy annual that can tolerate temperatures as low as 45°F (7°C) but requires protection from heavy frost. Amend your garden soil with compost to enrich the nutrients before planting.

Planting & Care

Sow purple salsify seeds directly into the ground in early spring, about 1/4 inch deep and 12 inches apart. As the plants grow, thin them out to provide enough space for development. Keep the soil consistently moist but not waterlogged, as too much water can cause the roots to rot. Once established, purple salsify is generally low-maintenance.

Common Problems
