How to Grow Potato

Overview

Potatoes are a versatile and rewarding vegetable to grow at home. These starchy tubers, native to the Americas, have been cultivated for hundreds of years and are now enjoyed worldwide as a staple food. With their easy growth requirements and high yield potential, potatoes make an excellent choice for any garden plot or even container gardening.

Growing Conditions

Potatoes thrive in well-drained, fertile soil with a pH between 5.0 and 7.0. They prefer full sun exposure but can tolerate light shade. The plants are heat-tolerant but sensitive to frost, so timing your planting carefully is key. In general, potatoes grow best when temperatures range between 60°F and 70°F (15-21°C).

Planting & Care

Plant potato seed pieces or certified seed potatoes about 4 inches deep in early spring once the soil has warmed. Space them about 1 to 2 feet apart to allow for tuber growth around the plant. As the plants grow, hill up the soil from around the stems to protect developing tubers from sunlight, which can cause them to turn green and become toxic.

Common Problems

One of the most common issues is potato blight, caused by the fungus Phytophthora infestans. This disease leads to black, rotten spots on the tubers. To prevent it, avoid overwatering your plants and improve soil drainage if needed. Another issue can be potato beetle damage, so keep an eye out for small holes in leaves or clusters of tiny caterpillars munching away.

Harvest or Enjoy

Potatoes are typically ready to harvest 90-120 days after planting, when the foliage turns yellow and dies back. Carefully dig up your tubers right before a heavy rain is predicted, as this helps "sweeten" the spuds by removing excess starches. Once harvested, store your potatoes in a cool, dark, dry place for long-term storage.
